做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖(gài )上锅(guō )盖焖。
